Pumpkin spice pancake recipe

A few days ago I posted about a great, fluffy pancake recipe. After having made that one, I decided to make a pumpkin pancake recipe of my own. My recipe is inspired by and roughly based off that fluffy pancake recipe.* These pumpkin hotcakes are soft, warmly spiced, and lovely for the autumn.

Ingredients

  • 2 cups milk
  • 4 Tbsp vinegar
  • 2 1/2 cups flour
  • 3 Tbsp sugar
  • 2 tsp baking powder
  • 1 1/2 tsp baking soda
  • 3/4 tsp salt
  • 1 1/4 tsp cinnamon
  • 1/2 tsp freshly grated nutmeg
  • 1/4 tsp cloves
  • 1/4 tsp ginger
  • 3 1/2 Tbsp oil
  • 2 eggs
  • 1 1/3 cups pumpkin

Recipe

Pour the milk into a bowl and mix the vinegar into it. Set aside.

Mix the dry ingredients together (flour, sugar, baking powder, baking soda, salt, cinnamon, nutmeg, cloves, and ginger) in a separate bowl.

Add the eggs to the milk, beating them. Add and mix in the oil and pumpkin, as well.

Finally, wisk the milk and egg mixture into the dry ingredients.

Cook your pancakes on a pan or griddle at medium / medium low heat.

  1. Thank you for this recipe! I altered the recipe slightly to make it gluten free, and they came out delicious. I had never thought of making pumpkin pancakes before, and they were a real treat together with maple syrup.
    I also wanted to tell you how much I love your blog. It is so refreshing; it reminds me to appreciate the simple joys of everyday life every time I read it.
